EASTER RICE PIE WITH PINEAPPLE: A CLASSIC DESSERT
Easter rice pie with pineapple is a delicious heirloom recipe that I am excited to share with you all. There’s nothing more rewarding than re-creating old family recipes and sharing them with you!
After every holiday dinner, the dessert table gets quickly set up with all of our favorite recipes. Rice pie is the highlight of the dessert table at our home each Easter and was the most highly requested Easter recipe from the Simply Rooted Community.
Easter Rice pie can also be known as ricotta pie, but no matter what you call it, this is a must have dessert on Easter Sunday.
Easter always brings very fond family memories. A fun fact about me, my husband and I got engaged on Easter weekend several years ago! Fast forward to Easter with kiddos, and it’s just so much fun. Our boys are still very young and have a “quiet time” during the middle of the day. This quiet time gives us the opportunity to hide plenty of Easter eggs around the property for a big Easter egg hunt in the afternoon. For Easter morning, we have an egg hunt throughout the interior of the house. Last year it was fun to see how many days it took the kids to find the very hidden eggs. In fact, there were some eggs in our cupboards for a couple of weeks after Easter!
A MAKE-AHEAD DESSERT OPTION
Hosting the holidays can get a little crazy. General life gets a little crazy, never mind hosting or holidays! A question I am often asked is how I get everything done (and if I sleep). Make-ahead foods are a huge secret to getting things done. I have learned that I have to do things when I have time to do them, not necessarily when it’s most convenient. This dessert was a perfect example! The two pies pictured here were baked one week before Easter and stored in the freezer.

EASTER RICE PIE WITH CRUST, OR NO CRUST?!
This recipe can easily be made with our without the crust. Similar to a crustless quiche, Easter rice pie can be easily poured into a lightly greased pyrex dish or pie pan without the crust.
TOOLS AND INGREDIENTS NEEDED TO MAKE EASTER RICE PIE WITH PINEAPPLE

- Mixing bowls – our trusted mixing bowls are no longer available, but these are the closest alternative!
- Measuring cups
- Rolling pin
- Large mixing spoon
For the pie crust
- 1 C all purpose flour
- 4 TBSP milk
- 2 egg yolks
- 1/2 C confectionary sugar
- 1/2 tsp lemon juice
- 3 TBSP oil
For the pie filling
- 1/2 lb cooked rice (1 C uncooked)
- 1 lb ricotta cheese
- 2 C sugar
- 4 eggs
- 1 C milk
- Small can of crushed pineapple
MAKING RICE PIE
For the crust…
Combine the milk, egg yolks, lemon juice and oil together in a bowl and mix well. Slowly incorporate the dry ingredients into the mixture and continue to mix.
After fully incorporating, place the crust mixture in the refrigerator for a minimum of 30 minutes to harden.
When ready to bake your pies, remove the crust from the fridge and separate it into two equal parts. Each half will produce one 9″ pie crust. Both crusts are necessary for this recipe as it makes two pies.
Liberally flour the counter and roll the crust out thin, then place the crust in the pie plate.
For the pie filling …
Preheat the oven to 350 degrees.
This is the easiest recipe to hit Simply Rooted Farmhouse to date! To make Easter Rice Pie with Pineapple, mix all of the ingredients into a large mixing bowl. Mix until well incorporated.
Pour the well mixed ingredients into the pie plate with crust. Try this recipe with or without crust!
Bake for about 1 hour, or until firm all the way through. This recipe makes two 9″ pies.
